Tis that time of year, folks. Yep. Karla has been baking up a storm. A perfect cookie storm, that is. For some strange reason, all my cookies have turned out perfectly...
Well, except for these ones.
Lookit how ugly these cookies are, peeps. And, it made a shitton of them. So, now I have FIVE dozen ugly-ass cookies that I really don't want to put in my holiday gift boxes because they are so hideous looking.
(although all my taste testers told me they were quite delicious)
Maybe, I shall just put them at the bottom so they're not the first things people see?
Anywho, I thought I might share the recipe with all your fun folks this cheery Monday morning. Here you go. Don't say I never gave you anything ;)
Pineapple Cookie recipe
cream together:
1 cup butter (softened)
2 cups granulated sugar
mix in:
2 eggs
15 oz can crushed pineapple (in juice, NOT syrup), drained; reserve juice for glaze
1 teaspoon vanilla extract
add in:
4 cups flour
1/2 teaspoon kosher salt
1 teaspoon baking soda
drop by spoonfuls onto greased cookie sheet and bake at 350 for 12 minutes
Glaze: (optional) I didn't do the glaze. my taste testers said the cookies were sweet enough without it.
4 tablespoons room temp butter
1 pound powdered sugar
reserved pineapple juice
Mmmm. They sound amazing! And who cares what cookies look like as long as they taste good? :)
